NOTE: Our family had planned a 15 hour trip to my in-laws, but at the last minute DearHubby decided to stay home to work on our house renovations because we have no siding or insulation on our addition and winter's nearing quickly. We are invited to a friend's house for Thanksgiving Dinner, but we will probably decline. This is the first opportunity for us to just celebrate Thanksgiving together as a family without the concern of travelling and I think it would be nice to just enjoy our own family and give thanks to God together. My Thanksgiving menu is not typical of Thanksgiving dinner (no turkey). I didn't earn a free turkey this year and I didn't want to go through the hassle of planning a last minute meal and then fighting the crowds at the supermarket. In addition, it's not really the food we're celebrating. This is a time that is actually set apart by our federal government to give thanks to God and we have so much to be thankful for...His grace, His mercy, His love, His forgiveness, His Son...Last year Thanksgiving went right past me because I was sooooooooo busy planning out DearDaughter1's first birthday party (she was born on Thanksgiving 2005) that I did forget to give thanks. Well, this year, we celebrated DearDaughter2's 2nd birthday early and we purchased our BBQ Chicken dinner yesterday and I have that in the freezer along with my Mrs. Smith's apple pie. This year I don't want to be concerned about anything, but glorifying and thanking our Lord!!!
Friday: Korean BBQ Chicken, rice, steamed veggies
Saturday: Hearty hash brown dinner

*Pumpkin Pie Recipe ALERT* - Last week I raved about a pumpkin pie recipe that I made. Well, I used fresh pie pumpkin with that recipe but this weekend I tried it with canned pumpkin...It just did not turn out the same...The freshly cooked pumpkin was way better!
