Menu Plan Monday #22


Week of April 30-May 6, 2007
Monday: Pizza
NOTE: Mondays are Pizza nights at OurHome. I am usually out during the day running errands and by the end I am usually too tired to think about cooking and I just pop in a Red Baron Pizza for dinner.
Tuesday: Beef tacos
Wednesday: Leftover Beef tacos
Thursday: Teriyaki Salmon (or Tilapia) w/ Lipton's Chicken Flavored Rice, steamed veggies
NOTE: When I was pregnant with DearDaughter1 I ate fish once a week to get my Omega-3 intake. I've been horrible about eating fish during this pregnancy and am beginning this once a week fish deal again. Therefore, Teriyaki Salmon or Teriyaki Tilapia will be on the menu at least once a week. It's my favorite way of making fish.
Friday: Store bought roasted chicken w/ white rice, steamed veggies
Saturday: Beef and Broccoli Stir-Fry w/ white rice
Sunday: Leftover Beef and Broccoli Stir-Fry w/ white rice

Update from last week's menu:
The Korean BBQ Marinade is a keeper!!! I purchased a whole chicken, cut it up, and marinated it for 10 minutes and then put the chicken and marinade in the crockpot, (2 hours on high and last 2 hours on low). Then, 5 minutes before serving I broiled it to crisp up the skin. The leftovers were even better as the marinade had really soaked into the chicken!!!

I was too lazy to bring out the grill, but I bet the chicken would have tasted even better if it was marinated for 4 hours as the recipe recommends and then BBQ'ed. My mouth is watering just thinking about it!!!

What a yummy menu!!! Everything sounds wonderful!

We have a store that sells the whole rotisserie chicken and they are so good! You reminded me that I need to pick one of those up soon! Maybe for next weeks menus.
