Week of February 5-11, 2007
Note: Our family's been going overbudget again in groceries and so for a few weeks, my menus might be repetitive and easy with no new recipes, just to save a little money.
Monday: Meatloaf, mashed potatoes, green beans
Tuesday: Leftover Meatloaf, mashed potatoes, green beans
Monday: Meatloaf, mashed potatoes, green beans
Tuesday: Leftover Meatloaf, mashed potatoes, green beans
Wednesday: Teriyaki noodles with beef, white rice, steamed veggies
Thursday: Pizza, steamed veggies
Thursday: Pizza, steamed veggies
NOTE: Mondays are usually Pizza nights at OurHome because I am usually out during the day running errands and by the end I am usually too tired to think about cooking and I just pop in a DiGiorno Pizza for dinner. However, I have Mom's' Coffee Break this Thursday and decided that Pizza might be better on this day.
Friday: Red beans and rice with beef, steamed veggies
Saturday: Roast Beef w/ Mashed Potatoes
NOTE: Dinner guests are bringing veggies & dessert.
Sunday: Store bought chicken roast, white rice, steamed veggies
I had my first Mom's' Coffee Break meeting last week and a DearFriend brought homemade protein bars. They were delicious!!! I will be purchasing the ingredients today when I go grocery shopping. I'm excited to make them! They're much healthier than a cookier and so if I wanted to have dessert after a meal, I could just have one of the bars and a cup of milk. Yummy!!!

Aren't the ready roasted chickens great? lol I usually buy two large ones to feed the six of us and use the leftovers for curry the next night.
Have a great week
Red Beans and Rice is so nutritious. And Meatloaf, now we're talking comfort food.
Happy Library Lover's Month.
