Menu Plan Monday #23


Week of May 7-May 13, 2007
Monday: Pizza
NOTE: Mondays are Pizza nights at OurHome. I am usually out during the day running errands and by the end I am usually too tired to think about cooking and I just pop in a Red Baron Pizza for dinner.
Tuesday: Beef tacos
NOTE: Was so tired last week that I barely cooked and had a lot of take-out. Tacos was on the list I didn't make last week.
Wednesday: Leftover Beef tacos
Thursday: Teriyaki Salmon (or Tilapia) w/ Lipton's Chicken Flavored Rice, steamed veggies
NOTE: When I was pregnant with DearDaughter1 I ate fish once a week to get my Omega-3 intake. I've been horrible about eating fish during this pregnancy and am beginning this once a week fish deal again. Therefore, Teriyaki Salmon or Teriyaki Tilapia will be on the menu at least once a week. It's my favorite way of making fish.
Friday: Store bought roasted chicken w/ white rice, steamed veggies
Saturday: Easy Thai Chicken w/ white rice
Sunday: Leftover Easy Thai Chicken w/ white rice

Update from last week's menu:
The Beef and Brocolli Stir-Fry is another keeper!!! One thing I don't like about take-out Chinese food is how greasy it is, so I skipped adding the 2nd tablespoon of oil and instead of using vegetable oil I used olive oil. It was great!!! There was a little too much oyster sauce for my taste, so I think I'll add less of the sauce next time. Overall, this dish was delish!

I'm definitely with you regarding being just too tired to cook after running errands. I ended up serving pizza on Friday. And my family loved it. I should do things like that more often.
