Menu Plan Monday #18


Week of April 2-8, 2007
Note: We had lots of leftovers and I was only able to make the Hawaiian Chicken Bake last week. I will try the Pizza Pancakes this week.
Monday: Teriyaki Salmon w/ Lipton's chicken flavored rice, steamed veggies
Tuesday: Pizza
NOTE: Mondays are usually Pizza nights at OurHome, but it will be on Tuesday this week. I have a full schedule this Tuesday and I know by the end of the day I will be too tired to think about cooking and I so I will just pop in a Red Baron Pizza for dinner.
Wednesday: Beef Tacos
Thursday: Leftover Beef Tacos
Friday: Store bought roasted chicken w/ white rice, steamed veggies
Saturday: Pizza Pancakes w/ salad
Sunday: Cream of Mushroom Chicken w/ Uncle Ben's Rice, steamed veggies
Note: Saturday or Sunday's menu may change due to this Holiday Weekend. Have a blessed Resurrection Day everyone!!!

I went to a baby shower yesterday and brought a yummy beverage. Everyone loved it and was asking for the recipe, so I thought I'd share the recipe for Mint Raspberry Punch here too.

Update from last week's menu: (no picture of dish)
I made the Hawaiian Chicken Bake last week. It was not one of my favorite new dishes. It was a little on the sweet side for DearHubby and I. Since I had a lot of leftovers I served it with Uncle Ben's Wild Rice the next day which toned down the sweetness a bit. DearHubby's comment was that it was like eating dessert on top of chicken.

I'm wondering if the Hawaiian Chicken has coconut in it? I made Coconut Chicken last week and I loved it but it was too sweet for my husband.
